Biography

Elizabeth's journey to becoming a Registered Dietitian was anything but conventional. After earning her first bachelor's degree in International Studies from Texas State University with plans to attend law school, she found herself drawn to a deeper passion—nutrition and wellness. Listening to that calling, she returned to school to pursue her true interest in human nutrition and dietetics. In 2019, Elizabeth graduated Magna Cum Laude from the University of Houston with her second bachelor's degree and completed her Dietetic Internship at the same institution.

Now a Certified Diabetes Care and Education Specialist (CDCES), Elizabeth combines her expertise in nutrition and diabetes care to help patients improve their health and manage chronic conditions. When she's not working with patients, she enjoys staying active, taking care of her plants, and spending time with her family and beloved dog, Rascal.
